SAUSAGE GARBANZO BONANZA : MEXICAN FOOD RECIPE

Pimientos are also known as cherry peppers and are sweet variety make up the red insides of Spanish green olives. Serves 6

INGREDIENTS

1 medium-sized white onion 1 garlic clove 2 cups canned garbanzo beans 1⁄2 cup canned pimientos 1⁄2 pound pork sausage 1 teaspoon chili powder 1⁄2 teaspoon salt 1⁄4 teaspoon dried oregano 1⁄2 teaspoon ground black pepper

DIRECTIONS

1. Peel the onion and chop into 1⁄4-inch pieces. Peel and mince the garlic. Drain the garbanzo beans and rinse. Drain the pimientos and cut into 1⁄4-inch-wide strips. 2. Brown the sausage in a frying pan on medium heat. Add the onion, garlic, and chili powder; cook until the onion is soft. 3. Add the garbanzos and pimientos; stir well. Bring to a simmer. Add the salt, oregano, and pepper.
