3 small zucchini
1 large red tomato
2 fresh jalapeño peppers
1 garlic clove
1⁄2 pound mild Cheddar cheese
2 cups fresh or canned whole-kernel corn
1. Cut the zucchini into 1-inch chunks. Chop the tomatoes into 1⁄4-inch pieces. Remove the stems and seeds from the jalapeños and chop into 1⁄4-inch pieces. Peel and mince the garlic. Cut the cheese into 1⁄2-inch chunks.
2. Combine the squash, tomatoes, peppers, and garlic in a large saucepan. Turn heat to mediumlow.
Heat slowly until the ingredients are hot.
3. Add the corn and cheese. Cover and continue to cook until the cheese is melted.
